Vegetable Frittata

A healthy way to spice up your day

What better way to spice up an otherwise boring gathering with some zest? This piquant Frittata is the perfect dish for a study group session, book club gathering, or potluck of any sort. Chock full of veggies, this pie is perfect for pleasing all parties, vegetarians included. Spell out anything, from someone's name to a "congratulations" with red peppers on the top for some personal flair.

Makes one frittata

- 8x10 ceramic pan
- Frying pan
- Large mixing bowl
- Small mixing bowl
- Kitchen knife
- Strainer
- Cheese grater
- Mixing spoon

- 1 dozen eggs
- 1 package chopped spinach—fresh or frozen
- 8 mushrooms
- 2 peppers—any color
- 2 medium onions
- 1 cup Swiss cheese
- Salsa

1. Oil a large rectangular ceramic pan
2. Chop onions, peppers, and mushrooms and lightly sauté in a frying pan. Put aside
3. Thaw and spin out the water in frozen chopped spinach or wash and dry fresh spinach
4. Beat one dozen eggs to frothy mixture
5. Add spinach, onions, mushrooms, peppers, and spinach and mix thoroughly. Add Swiss cheese
6. Pour mixture into ceramic pan
7. For fun, cut up vegetables and make decoration (words, pictures, etc.)

8. Cook at 350 degrees for 30 minutes, and 375 for 15 minutes or until top is lightly toasted. Serve with salsa for a wonderful brunch dish.
