A remedy for your aching fridge


Thanksgiving is like a marathon. Holiday revelers must endure tons of delicious food and the eccentric relatives that seem to appear ever holiday without fail. Then there is the main event, Thanksgiving dinner. After hours of slaving over a hot oven, or watching oversized cartoon characters float over Manhattan, the participants gather around a sagging dining room table and dive headfirst into the seemingly endless dishes of turkey, stuffing, casseroles and desserts. Soon enough dinner is over, the in-laws are passed out in the living room and only one question remains: What to do with the leftovers? Cranberry Sauce

Prep Time is about 2 minutes. Cook time is about 5-10 minutes

- Leftover Cranberry Sauce

Preparation:
1. Pour leftover cranberry sauce into a saucepan.
2. Boil the sauce down until it becomes a cranberry syrup.
3. Enjoy over ice cream, pudding, cake or anything else you can think of!

Turkey and rice easy fix soup

Prep Time is about 5 minutes. Cook time is about 20 minutes. Makes about 6 servings

Kitchenware:
- Sauce Pan with top
- Wooden Spoon
- Can opener
- Measuring Cup
- Strain

Ingredients:
- 4 cups chicken broth
- 1cup water
- 1teaspoon fresh rosemary or 1/4 teaspoon dried rosemary, crushed
- 1/4 teaspoon pepper
- 1 10 oz package of frozen mixed vegetables (2 cups)
- 1cup quick-cooking rice
- 2 cups chopped turkey
- 1, 14.5 ounce canned tomatoes, cut up

Preparation:
1. Combine chicken broth, water, rosemary and pepper in a large saucepan. Bring to a boil.
2. Stir in vegetables and rice. Return to a boil. Reduce heat and simmer covered for 10-15 minutes until the vegetables and meat are tender.
3. Stir in the turkey and drained tomatoes.
4. Heat the whole thing.
5. Enjoy!

Turkey Sandwich

A sandwich is a simple yet creative way to enjoy the main dishes of the holiday. With a turkey sandwich, the sky is the limit. Put anything on it from tomatoes to duck sauce to slices of avocado—the turkey sandwich can handle pretty much anything, and is a fantastic way to get rid of both urkey and any number of other leftover ingredients. You could even try the Gargantuan Leftover Special: sliced turkey, stuffing and assorted vegetables between two slices of bread smeared with mashed potatoes.

Turkey Sourdough Pesto Sandwich

Prep Time is about 10 minutes. Cook time is about 45 minutes. Serves 8

Kitchenware:
- knife
- measuring cup
- tin foil

Ingredients:
- 1 uncut round loaf of sourdough bread
- 6 ounces turkey
- 1/4 cup pesto
- 1 medium tomato, thinly sliced
- 8 slices mozzarella cheese

Preparation:
1. Preheat oven to 350 degrees.
2. Cut a one-inch slice off the top of the bread and hollow out the inside of the bread.
3. Layer half of the turkey, pesto, tomato and cheese in that order. Repeat.
4. Place the one-inch slice of bread back on.
5. Wrap the bread in tin foil and bake for 45 minutes.

Turkey Wrap

Prep Time is about 10 minutes. Cook time is about 15 minutes. Serves 8

Kitchenware:
- knife
- cutting board
- small bowl
- spoon
- saran wrap
- measuring cup

Ingredients:
- 1/2 cup mayonnaise
- 1/2 teaspoon oregeno leaves and garlic powder
- 8 flour tortillas
- turkey breast
- 1-cup cucumber slices
- 1 red bell pepper cut into strips

Preparation:
1. Mix mayonnaise and seasonings and spread on tortillas.
2. Distribute the turkey on the tortillas.
3. Layer the pepper and cucumber on the turkey.
4. Roll up the tortillas and wrap in saran wrap.
5. Refrigerate until ready to serve. Serve whole or sliced.
