A dim sum to remember

Traditional Chinese side dish for the Chinese New Year


Though traditionally made during the Chinese New Year as a symbol of prosperity and growing fortunes, the Chinese turnip cake is a dish enjoyable at any time. It is commonly found as an item on dim sum menus, but no restaurant turnip cake can ever compare with the homemade version, stir fried with shrimp, mushrooms and Chinese sausages, then steamed and pan fried to a golden brown. Sit back, relax, and enjoy the delicious taste of Chinese turnip cake slowly melting in your watering mouth.

Chinese Turnip Cake

Prep time is about 2 hours. Makes about 6-8 servings.

Kitchenware:

- 2 bowls
- 1 blender
- 1 grater
- 1 rice cooker
- 1 pot
- 1 pan
- 1 knife
- 1 peeler
- measuring cups

Ingredients:

- 2 cups rice
- 2 cups water
- 1 lb. turnip
- 4 mushrooms
- 8 oz. bacon
- 2 tsp. salt
- 1/3 cup dried, tiny shrimp
- 1/2 tsp. oil

Preparation:


1.Leave 2 cups of rice and 2 cups of water in a bowl overnight to soften the rice.
2.Pour 1/4 of a cup of rice into the blender and add 1/4 of a cup of water. Blend the mixture until the rice has been mixed thoroughly with the water and the mixture is a thick liquid. Pour the mixture out into a large bowl.
3.Repeat step 2 three more times until all the water and rice has been used.
4.Peel off the skin of the turnip and cut the turnip in half.
5.Use a grater to grate both halves of the turnip.
6.Cut the mushroom into tiny pieces.
7.Cut the bacon into tiny pieces, just like the mushroom.
8.Heat a pan on the stove and pour in two tablespoons of oil. Then add in the bacon, shrimp and mushrooms.
9.Cook and mix together the bacon, shrimp and mushrooms. Then also add in the shaved turnip and thoroughly fry everything so that they are all mixed evenly.
10.Slowly pour the rice and water mixture into the pan while evenly stirring it with everything else so that the bacon, mushroom and turnip will all be evenly mixed with the rice mixture. Sprinkle in two teaspoons of salt and continue to evenly mix until the mixture becomes a thick paste.
11.Pour the paste into a pot and steam it in the rice cooker.
12.Once cooked, take out the turnip cake and cut it into rectangular pieces.
13.Fry the pieces in the pan until golden brown and enjoy!
