Smashing cauliflowers

A tasty and different take on mundane potato dishes


Although called smashed potatoes, this recipe contains no potatoes at all. In fact, this healthy variation on an American favorite is actually made out of cauliflower. It takes only 20 minutes to make and requires only a food processor and a microwave for a light and steaming side dish. If you have got a sudden party to plan for, or if you just want something hot and fast, smashed potatoes is a fresh relief from mundane dishes.

Prep time is about 15-20 minutes. Makes about five servings.

Kitchenware:
- 1 Cuisinart food processor
- 1 knife
- 1 strainer
- 1 large bowl with cover
- 1 microwave
- 3-4 cups of water
- measuring cups

Ingredients:
- 2 ounces of half-and-half (a mixture of half cream and half milk that can be substituted with equal parts cream and milk)
- 2 tbsp of butter
- 1 head of cauliflower
- pinch of salt
- pinch of fresh pepper

Preparation:


1.Cut off the green and black parts on the cauliflower.
2.Wash the cauliflower.
3.Cut up the cauliflower into pieces that can easily be blended.
4.Put the cauliflower into a covered bowl with three to four cups of water.
5.Microwave the bowl for eight minutes until the cauliflower is soft.
6.Place the cauliflower in the food processor.
7.Add two tablespoons of butter or margarine into the food processor.
8.Add a pinch of salt and pinch of pepper.
9.Add two ounces of half-and-half.
10.Put top on food processor and set to puree. Blend for about three to four minutes
11.Pour your hot and steamy smashed potatoes into a bowl
12.Serve and enjoy!
