A quirky new bread with a tropical twist


Readers have seen mango recipes from smoothies to salads, but Silver Chips is throwing another curveball of fruit-tacular eats: mango bread! This warm-weather treat is perfect for a picnic or at the pool to re-energize you for that day in the sun. Not only is this bread quick to whip up for guests, but the combination of mango, raisins and a hint of lemon leave eaters in a tropical bliss crazy for more! Prep time is about 10 minutes. Cooking time is 60 minutes. Makes about 10 servings.

Kitchenware:
- 1 small bowl
- 1 eggbeater
- 1 knife
- 2 8x4 loaf pans
- 1 wooden pick
- 1 sifter
- Measuring cups
- Measuring spoons

Ingredients:
- 2 cups flour, sifted
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1/2 tsp salt
- 1 1/4 cup of sugar
- 2 eggs
- 3/4 cup of oil
- 2 1/2 cups chopped mango
-1 tsp. lemon juice
- 1/2 cup of raisins

Preparation:


1.Preheat oven to 350 degrees. Grease pans.
2.Combine sifted flour, cinnamon, baking soda, salt and sugar in a small bowl.
3.Beat eggs with oil into the flour mixture.
4.Stir in mangos, lemon juice and raisins.
5.Pour mixture into 2 greased loaf pans.
6.Bake for one hour or until a wooden pick in the center comes out clean.
7.Let it stand for five minutes before serving.
